Valentine’s Day Treat Idea: Hazelcoconut Cookies

Theres nothing like a homemade treat for your sweet!! These were a big hit. Did not last two days!! Of course only my sisters separate bag. No one dares to take a preggos treat! LOLOL

RECIPE:

Makes about 25-30 cookies

  1. 3/4 cup Unsalted Butter, softened
  2. 1 cup granulated Sugar
  3. 1/2 cup Brown Sugar, firmly packed
  4. 1 large Egg
  5. 1/4 cup Water
  6. 1 tsp Vanilla Extract
  7. 3 cups Oatmeal
  8. 1 cup Wheat Flour
  9. 1/2 tsp Sea Salt
  10. 1/2 tsp Baking Soda
  11. 1 cup shredded Coconut
  12. 1 cup Hazelnuts, chopped

*You can also add 1 cup of Raisins/Vanilla Chocolate Chips/Dried Cranberries or Apricots and much more.

PREPARATION:

  • Preheat the oven at 350°F. With electronic mixer, beat butter, egg, sugars, water and vanilla extract until
  • Combine oatmeal, flour, salt and baking soda.
  • Add dries to batter and mix well. (I like to do it in two parts)
  • Add Hazelnuts and coconuts. (As well any other ingredients, if using)
  • Take a spoonful and roll into a ball. Place onto a ungreased pan 2 inches apart.
  • Bake for 10 to 12 minutes or until golden brown.
  • Cool for 5 to 6 minutes then transfer to rack and cool completely.

Homemade Almond Milk and Almond Flour

Have you ever wonder what our milk is made out of? One would think cows or variety of nuts.

But have you ever thought what else is in our milk? Well that runs through my mine daily.

So I decided to learn how to make my own. Now I know exactly what is in it and I can even play around with flavors. Making our own milk, we will no longer have to worry about preservatives, artificial sweeteners, chemicals, steroids, carrageenan, pesticides or GMOs or who knows what else.

This is a simple and fun recipe.

**DO NOT THROW AWAY THE ALMOND PULP!! Check below for the DIY Almond Flour (Meal) 😉

RECIPE:

  •  1 cups Raw Whole Almonds (not toasted)
  •  5 cups Water (to make 2 qts use 8-10 cups)
  •  1 tsp Vanilla Extract (Optional, You can also use flavors of your choice)
  •  Blender
  •  Metal strainer
  •  Cheesecloth (I’m thinking of investing in a Nut Milk Bag to eliminate the Cheesecloth and Strainer)

PREPARATIONS:

  1. Soak almonds for 8 hr or over night.

2.  Strain water, place the soaked almonds in your blender. Add 2 cups of water blend until they become a really smooth paste, (at this point you add the vanilla) blend 4 mins.

3.  Then add the rest of the water blend for 5 mins.

4.  Use cheesecloth over a bowl. Pour it into the bowl , help the almond milk through the cheesecloth.  (Things became messy at this point LOL)

5.  Pour it into a glass container. Refrigerate to cool it. VIOLA!!

DIY ALMOND FLOUR (Also called Almond Meal)

PREPARATION:

  1. Spread the almond mixture out on a cookie sheet and place in the oven at 200 degrees (That was the lowest I could go) for a few hours.

**A trick I learned is  leave the oven door open just a crack so that any moisture can be release. It helps dry it out faster.  

         2. Once it’s dry, let it cool

3. Put it in a food processor or blender to get a finer texture, I use my NutriBullet.

4. Then transfer to a glass jar.

**Benefits of making your own flour are saving money (Almond flour is very expensive, as well getting your monies worth on those Raw Almonds!!), its Gluten Free and filled with tons of nutrition. You can make tons of desserts. I JUST LOVE IT!!!
